The Classic
Light, buttery and chewy. Like your first time at the sugar shack, only better.
Tire d'érable sur bâton · Maple taffy on a stick
Choose how to make your tip sticky
Pure Canadian maple syrup, cooked hot to 113 °C, poured over snow and wrapped around a nice, firm birch stick. One ingredient. Very sticky. Licking encouraged.
How we do it
Maple taffy is a sugar-shack tradition: hot syrup, cold snow and a little wrist action before it sets. We do it the old-fashioned way, in this order.
We tap the sugar maples when nights freeze and days thaw. That's when the sap really starts flowing.
About 40 litres of sap boil down to one litre of syrup at 66 °Brix. It takes stamina.
Back on the heat until it hits 113 °C. Hot, thick and ready.
A ribbon of hot syrup hits the cold snow and firms right up.
While it's still warm, we wrap it around a birch stick, nice and tight.
Syrup is done about 4 °C above the boiling point of water. Taffy needs roughly 9 °C more. Pull out too early and it's a runny mess; leave it in too long and it goes hard as candy. Timing is everything.
The pops
Every pop is pure maple syrup wrapped around a birch stick. Individually wrapped, because protection matters.
Light, buttery and chewy. Like your first time at the sugar shack, only better.
Late-season dark syrup with a deeper, toasty finish. Bold, a little smoky, for those who like it a bit rough.
250 mL of taffy-ready syrup, 12 birch sticks and step-by-step instructions. Bring your own snow and do it yourself, at home, as often as you like.
Our story
Every March, sugar shacks lay out troughs of packed snow and pour hot syrup all over them. Everyone lines up with a stick. It's over in thirty seconds, and you're already thinking about next year.
Tip Sticky makes that moment last longer. Same syrup, same snow-set chew, wrapped and ready for the lunchbox, the chairlift or the glovebox.
If your fingers aren't sticky, you're doing it wrong.
Our mascot
He's a little blob of maple taffy in a red tuque who woke up one March night in a sugar bush in the woods of Quebec. Now he taste-tests every batch, and he has never once let go of anything.
